Are you looking for the easiest and tastiest little finger food for your next party or game day? Antipasto Skewers are all that and more. Seriously they are so simple to throw together and such a huge hit. Where have these babies been all my life?!

So we were asked to bring a dessert to a gathering at a friends house. No problem! Plenty of notice was given and even if it wasn’t we have plenty of quick and easy throw together desserts we can make.

But then day before the party we get a call asking if we can also make an easy appetizer. Of course we can! Trying to figure out what to make is always the hardest part in my book.

I also didn’t feel like going to the market again. Our house is always pretty well stocked with everything between the pantry and freezers.

I really wanted to make something different ya know? Not the usual dip or cheese ball sort of thing. Plus it was a going to be a beautiful night and we would be spending time outside and wanted something people could pick up and carry back and forth easily.

Then it hit me…Antipasto skewers! I just wasn’t sure we had everything in the house to make them. But you know what? I knew we had mostly everything so we could improvise.

Antipasto Skewers

Because antipasto skewers are basically a mini antipasto on a stick. So if you don’t like mozzarella use cheddar or monterey jack. You can use any olives you like such as black, green or kalamata.

Don’t care for basil? Use some baby spinach instead. You get the idea. The options are endless. The recipe can be double, tripled or halved depending on what you need.

So the flexibility of this appetizer is great! all you need is the skewer and a couple of the important ingredients and you go go with the rest!

What I used to make the Antipasto Skewers

Luckily I had tomatoes, salami, olives (we chose to go with green since we had an open jar in the fridge) basil (always on my shopping list) Mozzarella cheese pearls (we love throwing these in a salad normally we buy these or the marinated ones every week) cheese tortellini (always in my pantry). That was enough to put together my appetizer.

Do you marinate the skewers?

We marinate the tortellini and then brush zesty salad dressing over the the skewers after we place them on a serving plate or platter.

How to Make Antipasto Skewers

This recipe couldn’t be any easier. Simply work with what you have in your pantry and fridge or purchase what you need and thread the everything on the skewer. The only cooking involved is the tortellini. allow it to cool completely before you thread it.

How far in advance can you make antipasto skewers?

Since they are so simple and easy to put together we normally would make them about 4 hours or so before they are needed. Mostly because we like to keep the basil as fresh as can be.

Seriously it doesn’t get much better or easier than these Antipasto skewers.  Talk about a fantastic appetizer!  They’re so beautiful, and since we eat with our eyes first, they make your mouth water just looking at them. 

What a great addition to a buffet table, or on party platters to pass around, or to jazz up a long table full of friends or family.  You are really going to love this recipe!

Antipasto Skewers

Ingredients

  • 1 pound of Salami slices
  • 1 pound of Cherry Tomatoes – rinsed
  • 9 oz package cheese tortellini
  • about 40 leaves of basil
  • 1 bottle of green olives (or olives of your choice)
  • 2 packages of Mozzarella cheese – pearls
  • 1 bottle of Zesty Italian dressing
  • 1 package of 10 inch wooden skewers

Instructions

  • Cook the Tortellini according to package directions, rinse, and set aside to cool. 
  • Rinse the Cherry tomatoes and dry on paper towels.
  •  Place the Tortellini in a plastic zip lock bag, and pour about half a bottle of the dressing over the Tortellini, and shake to coat.
  • Thread the Skewers with the Olives, tomato, basil, Tortellini, Salami, Mozzarella pearls, Salami, basil, Tortellini, basil, tomato, and an olive.
  •  Place the skewers on a plate, or serving platter, and brush the remaining Italian dressing over the skewers.
  • Keep refrigerated until time to serve.  Enjoy!
  • Makes approximately 12 – 10 inch Skewers  

Notes

NOTE:  You could use 8 inch Skewers, or 6 inch Skewers if you have a large number of guests, and double the ingredients so you would have more skewers with a few less ingredients on them, but still full, colorful, and delicious.
