For me, it’s all about the moist texture and flavor. And while appearance matters as well, there’s really nothing quite like that first forkful of homemade cake.

It has a subtle, yet delicious flavor that is sweetened ever so lightly with the pineapple. And the added dash of cinnamon adds a very pleasant aftertaste!

Do you have a favorite cake you like to make?

I have always loved Hummingbird cake but it is a more labor intensive than a bundt cake. We are always looking for easy and quick or quicker recipes and ways to do things. And this cake is quicker and really delicious. Bundt cakes are one of the best cakes you can make. Most are one bowl cakes and then you just pour them in the bundt pan and bake. 

How do you make this Hummingbird Bundt Cake Recipe?

  • Preheat oven to 350 degrees.
  • Using a whisk, mix the dry ingredients in a large mixing bowl.
  • Add in the eggs, oil, vanilla and pineapple. Stir until well combined, scraping the edges of the bowl as needed.
  • Mix in bananas and pecans.
  • Grease a bundt cake pan with shortening, then dust it with flour. Pour batter into the pan and bake for 60-65 minutes or until a toothpick inserted into the cake comes out clean. (Instructions for the Glaze is in the recipe card) 

Can I use walnuts in this cake rather than pecans?

Absolutely. You can use any type of nuts that you want to in all reality. Pecans are great, but you’ll get that same crunch and taste from walnuts, macadamia nuts or even cashews. If you have a nut that you really enjoy, swap it out and use it instead. But pecan are the true southern way of making this cake so I would stay with tradition.

How do you know when the bundt cake is cooked all the way through?

If you’re uncertain whether or not it’s cooked completely, just insert a toothpick into the center of the cake. If the toothpick comes out clean, it’s cooked and ready to be taken out of the oven. However, if it comes out with batter on it, then it’s going to need a few more minutes of cooking.

I also check it at 2-minute intervals because I don’t want to take the risk of burning or overcooking the cake. There is nothing worse than an over cooked dry cake!

Ingredients

  • 3 cups all-purpose flour
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 2 cups sugar
  • 1 tsp. cinnamon
  • 3 eggs
  • 1 cup vegetable oil
  • 2 tsp. vanilla
  • 8 oz. canned crushed pineapple, with liquid
  • 1 cup pecans, chopped
  • 2 bananas, chopped

Icing

  • 1 cup confectioners' sugar
  • 4 ounce cream cheese, at room temperature
  • ½ teaspoon almond extract 
  • 2-3 tablespoons whole milk 

Instructions

  • Preheat oven to 350 degrees.
  • Mix the dry ingredients in a large mixing bowl. Add in the wet ingredients and stir until well combined. Mix in bananas and pecans.
  • Spray a bundt pan with non-stick cooking spray.
  • Pour batter into the pan and bake for 60-65 minutes or until a toothpick inserted into the cake comes out clean.
  • Whisk together the confectioners' sugar, cream cheese, almond extract and 2 tablespoons milk in a bowl until very smooth.
    If the mixture needs to be looser, add an additional 1 tablespoon milk. Drizzle over cake when cake is cool.
