Low Carb Stuffed Peppers

 

I love this dish. You can’t even tell that I don’t use rice. I use riced cauliflower instead. Riced cauliflower is a staple for low carb, Keto diets.

 

It is very easy to make just cut up the cauliflower and toss in the food  processor until it resembles rice. Or you can take the easy way out which is what I do these days and buy it frozen or fresh at Trader Joe’s or your local market.

 

They are really easy and delicious. I always make extra for another dinner. They freeze well too. These make a tasty keto friendly meal. It can even be made ahead.

 

 

Low Carb Stuffed Peppers

 

Ingredients

2 tbsp. olive oil

1 lb. ground beef

1 lb. cauliflower , riced

4 red  or green peppers or a mix of both

1/2 chopped  medium onion

2 garlic gloves minced

chopped peppers from the tops of the peppers your using ( about 1/3 of a cup )

1/2 cup chopped fresh mushrooms

salt and pepper to taste

1 1/2  cup homemade  pasta sauce or use your favorite low carb brand

1/4 cup chicken stock or broth

2 cups mozzarella cheese

 

Instructions

Preheat oven to 350

Add oil to saute pan. Add ground beef, onions, mushrooms,garlic and salt and pepper. cook until ground beef is just cooked through and veggies are cooked.

Mash cooked cauliflower with a potato masher leaving it a bit chunky.  Add it to ground beef mixture, mix well. Add  1 1/2 cups mozzarella cheese and mix

Add 1 cup  pasta sauce , toss to mix well

Stuff peppers with mixture  and place in glass baking dish

Mix remainder of pasta sauce and chicken stock or broth and pour in pan with peppers

Top with remaining 1/2 cup mozzarella cheese

Bake at 350 for 1 hour covered

I spoon the extra sauce over the peppers and serve with a salad
