Don’t let all the greenery fool you!

This easy SPICY THAI CUCUMBER SALAD is sweet and spicy, tangy and smooth, simple and healthy. It is the perfect side to so many dishes. And a great lunch with a little tuna salad or chicken salad too!

Don’t be afraid to eat this alone either as I found out as I made it and did that myself by taking a taste every few minutes here and there. eventually there was not much left. So next time a  double batch it is!! I used Stevia instead of sugar to keep this low carb.
