To prepare the dough, beat butter, sugar, and cinnamon until fluffy, add yolk, vanilla, flour, almond flour, and cinnamon, mixing until just combined.

Add green food coloring, refrigerate for 30 minutes. Roll out the softened dough, cut rounds using a 2 1/2" cookie cutter. Cut 15 rounds from remaining dough, creating a peekaboo cutout in each. Bake at 350 degrees for 12-15 minutes.

Let cool, then spread jam on whole cookies and sandwich with cutout cookies. Dust with powdered sugar.
