STRAWBERRY ICEBOX CAKE

This Strawberry Icebox Cake is an easy, delicious no-bake treat made with layers of graham crackers, sweet, tangy strawberry jelly-infused cheesecake, and sliced, fresh strawberries.

Ingredients

– Cream cheese – Powdered sugar – Heavy whipping cream – Vanilla extract – Strawberry jelly – Graham cracker sheets – Strawberries  – Mint for garnish

In a large bowl, use an electric mixer to blend cream cheese and powdered sugar until fluffy. Add heavy whipping cream, vanilla, and strawberry jelly, beating until soft peaks form.

Layer graham crackers on the bottom, spread with cream mixture, and top with strawberries and more graham crackers.

Repeat layers, finishing with a final layer of graham crackers. Cover with plastic wrap and refrigerate for at least 4 hours, preferably overnight.

Thaw for 30 minutes before serving. Top with remaining filling, garnish with strawberries and mint if desired, slice, and serve.
