LEMON MERINGUE CHEESECAKE

Rich lemon cheesecake is nestled in a graham cracker crust and topped with light, airy meringue perfectly toasted on top. Can you taste it yet?!

Ingredients

– Graham cracker crumbs – Cream cheese  – Sour cream – Eggs  – Lemon juice – GOODMAN’S lemon extract – Lemon curd

Blend graham crackers into fine crumbs, mix with sugar and butter, then press into a parchment-lined springform pan to form the crust.

Mix cream cheese, sour cream, sugar, lemon juice, eggs, and vanilla in a stand mixer until smooth, then pour over the crust and bake for 1 hour

Cool completely, spread lemon curd over the top, and refrigerate overnight.

Before serving, whip egg whites and cream of tartar with sugar until stiff peaks form, then spoon and shape the meringue over the cheesecake.
