Cheesy Chicken Spinach Lasagna is comfort food at it’s finest. Comfort food is all kind of food in my book.
We love all kinds of lasagna. This lasagna is so easy to make. You can prepare most of it before hand if you like. For instant I alway have chicken made ahead of time. Most of the time I have pre-cooked chicken breast in the freezer ready to go. Spinach is a staple in our house.
We are all about easy and simple in our house and this lasagna fits the the bill perfectly.
Here’s how simple it is to make:
Mix together Ricotta cheese, eggs, and seasonings and set aside.
Over medium low heat, melt Parmesan cheese in half & half. Stir until it starts to slightly thicken. For a thicker sauce, use heavy cream. Set aside.
Spray a 13×9 baking dish with non–stick cooking spray. Add layers of ingredients (you should have enough for 2 layers, with a final layer of noodles, sauce and cheese): noodles, half the turkey, half the fresh spinach, 1/3 of the Parmesan sauce, 1/3 of Mozzarella cheese.
Repeat with an additional layer, and then top off with final layer of noodles,sauce and Mozzarella cheese.
Bake at 350 degrees for 45-50 minutes. That’s it your done!!
This lasagna would be delicious with leftover turkey from your Thanksgiving feast and is also amazing made with seafood like shrimp and scallops.

Ingredients
- 9 ounce oven ready lasagna noodles
- 2 cups cooked chicken breast, chopped or shredded
- 5 ounce fresh spinach
- 15 oz Ricotta cheese
- 2 eggs
- 1 tsp salt
- ½ tsp onion powder
- ½ tsp garlic powder
- 2 tsp Italian seasoning
- ¼ tsp pepper
- ⅛ tsp red pepper flakes
- 1 cup Parmesan cheese, grated
- 1 cup half & half
- 3 cups Mozzarella cheese (divided in 3 parts)
