Chocolate Pumpkin Thumbprint Cookies

Chocolate Pumpkin Thumbprint Cookies Recipe – A soft and chewy pumpkin cookie filled with a sweet chocolate kiss!  Pumpkin thumbprint cookies are the epitome of all that is  fall. The perfect fall treat!

 

Chocolate Pumpkin Thumbprint Cookies are everything that screams Fall to me. Pumpkin everything has taken over our house as usual. From soups to desserts. Of course cookies are always a big hit in our house. We also like how sharable they are. 

These cookies are chewy and full of pumpkin flavor. The chocolate kisses add an extra yummy sweetness and the kids big and small love them.

You can certainly make these cookies just as a drop cookie and eliminate the kiss if you like. We have gotten the “look” when we have done that so we just add the kisses all the time now!   

 

Making these cookies is a cinch.  You all know we are about doing everything easy. 

INGREDIENTS:

1/2 cup unsalted butter room temp

1/2 cup brown sugar

1/2 cup sugar

1 egg room temp

1 tsp.vanilla extract

1 cup canned pumpkin

2 cups all purpose flour

1 tsp. baking soda

1 teaspoon cinnamon

1/2 tsp pumpkin pie spice

1/2 tsp salt

Hershey’s Kisses

Instructions: 

Preheat oven to 350 degrees.

In a large bowl add your butter, sugar, and brown sugar.

Cream together.

Add in egg and vanilla to the butter mixture and mix to combine.

Add in pumpkin puree and mix to combine

 

In a small bowl whisk together flour, baking soda, cinnamon, pumpkin pie spice, and salt.

Add the flour mixture to the butter mixture and beat until well mixed.

Using a small cookie scoop of dough and place on a parchment lined cookie sheet.

Bake for 8-10 minutes.

They will be soft.

Remove from oven.

Top each cookie with a Hershey kiss.

Allow cookies to cool completely.
