Easy Low Carb Coleslaw is so easy and so good. I made pulled pork the other night and this is great next to it or on top of it!!
My husband said it’s the best coleslaw he has ever eaten. I use prepackaged coleslaw mix . You can make your own if you like with fresh cabbage.
I just go for what is easiest and faster. I think the most important part is the dressing so if I use a bag of prepackaged slaw mix, it’s no biggie.

Easy Low Carb Coleslaw

- 1 16 ounce packages coleslaw mix ( I pull out the carrot peices)
- 1/4 cup thin sliced onion
- 1 packet sugar substitute
- 1/2 teaspoon salt
- 1/8 teaspoon fresh ground black pepper
- 1/2 teaspoon celery seed
- 1/2 cup mayonnaise
- 1/2 cup heavy cream
- 2 tablespoons white vinegar
- 2 tablespoons lemon juice
In a large bowl, combine the coleslaw and onion.
In a separate bowl, combine the sugar substitute,garlic powder, salt, pepper, celery seed, mayonnaise,heavy cream, vinegar and lemon juice, using a whisk.
Pour over the coleslaw mix, stir gently to mix.
Refrigerate for 2 hour or more
