This is one of the best breakfast casseroles we make! It’s always a huge hit and so easy to make. 

Make the casserole the night before, then in the morning you just bake the casserole and make the easy creamy gravy. That’s all it takes!  You may never go back to bacon an eggs or pancakes again!

Not that there is anything wrong with eggs and bacon. I love a good omelette and Eggs Benedict are always on the top on the list. Oh and lets not forget a big fluffy pancake. But those breakfast foods are hard to make when your feeding a crowd.

We are big fans of casseroles. Let’s face it they are always a quick and easy meal. We can usually throw them together in no time and the oven does the rest.  And if your feeding a family there is nothing better than a casserole. Easy and inexpensive casseroles are the way to go.

If you can find a few different breakfast or brunch casseroles to make for your next get together your work will be so much easier. and everyone will love what you serve too! I have never seen anyone turn their nose up at a good casserole.

THE INGREDIENTS FOR OVERNIGHT CROISSANT BREAKFAST CASSEROLE WITH GRAVY!

** Full amounts are listed in the recipe card

Olive oil 

Small onion

Breakfast sausage – mild only

Croissants – use butter croissants you find in the bakery section of the grocery store. (Do not use crescent rolls this will not work for this recipe.)

Shredded cheddar cheese

Eggs

Heavy whipping cream

Milk – whole milk is recommended

Dry mustard powder

Salt

Black pepper

Paprika

Garlic powder

Butter

Flour

How to make Overnight Croissant Breakfast Casserole Bake with Gravy 

You will start by making this recipe the night before you need it. Start by tearing the croissants into large bite sized pieces.

In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until soft and translucent. Crumble the sausage into the pan and cook until completely browned. Drain the fat from the pan and reserve to use in the gravy(pour into a small container with a lid and refrigerate overnight).
In a large bowl, combine the cooked sausage and onions, torn croissants, and the shredded cheese. Pour this mixture into a 9×13-inch glass baking dish greased with non-stick cooking spray.

In a medium mixing bowl, whisk together the eggs, heavy whipping cream, ½ cup of the milk, mustard powder, salt, pepper, paprika, and garlic powder. Pour this mixture all over the croissants and sausage in the baking dish.

Cover the baking dish with plastic wrap and refrigerate overnight, or for 8 hours.

Remove the casserole from the refrigerator and preheat the oven to 350F

Bake the casserole at 350F for 35-45 minutes until golden brown.

While the casserole is baking, heat over medium heat the butter and 1 tablespoon of the reserved fat (from cooking the sausage) until melted. Add the flour and whisk until combined. Allow the fat and flour mixture to cook over medium heat for 1 minute.

Slowly add the remaining 2 ½ cups of milk a small amount at a time, whisking well between each addition until all of the milk is combined. Allow the gravy to simmer on low heat for 2-3 minutes, stirring often, until thickened. Add salt and pepper to taste.

Slice the casserole and serve the gravy on the side or ladled over each slice.

How to store leftovers of Overnight Croissant Breakfast Casserole Bake with Gravy 

Store the leftover casserole in and airtight container in the refrigerator for about three days. Place the gravy  in a separate container and store it in the refrigerator for about three days.
The buttery croissants really make this casserole! And then the little bite of sausage and cheese and the spices just bring it all together. We like serving this with fresh fruit. You of course can serve it with whatever you like. Anything you serve along side this casserole will be perfect since this tastes amazing!

Ingredients

  • 1 tablespoon olive oil

    I made this dish for a work potluck. It was so easy to prepare the night before. The next morning after baking the casserole, I made the gravy and poured it on top. It was a big hit. Will be making again.

    1. We always make it the day before. Have never tried it 2 days ahead. My only concern might be the croissants getting too mushy

  7. Thanks for the recipe! Approximately how many cups of cut up croissants would you say are in the recipe? Not sure that the croissants I have are considered large and figured a measured amount might work better for me.

    1. We never measured the croissants so I can really say. There are only 2 kinds we have ever seen. The regular size and small ones. We use your average size croissant.
