We eat a lot of cauliflower in my house. Cauliflower is so versatile. You can dress it up or dress it down. And it sure does help when you go to the market and they have a surplus of cauliflower on sale for .99 a head!! And they were huge. What a bargain!!
There is nothing like roasted vegetables to me. You get so much more flavor and you can add pinch of this and that and things up some and things always taste a bit different.
We love cauliflower with Parmesan cheese and of course garlic. The combination of the Parmesan cheese and garlic and the roasted crispiness give this cauliflower a rich and meaty flavor and just that little bit of balsamic vinegar adds just enough zing. This makes a perfect low carb side to fried eggs the next morning too. Yes seriously it’s delicious with eggs.

Parmesan and Garlic Roasted Cauliflower- parmesan cheese, garlic and spices give this roasted cauliflower a delicious nutty flavor. It's one of our side dishes.
Servings: 6 -8 servings
- 1 large head cauliflower
- 1 sliced or chopped medium onion
- 1 teaspoon dried thyme or use fresh
- 4 minced garlic cloves
- 4 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Sea salt
- Freshly ground black pepper
- 1/2 cup grated Parmesan
Preheat oven to 425°F.
Cut 1 medium head cauliflower into florets and toss on a large rimmed baking sheet with sliced or chopped medium onion.
In a bowl mix thyme , minced garlic cloves, and tablespoons olive oil , balsamic vinegar, sea salt , and freshly ground black pepper.
Pour over cauliflower and onion and toss to evenly cover
Roast, tossing occasionally, until almost tender, about 35 – 40 minutes.
Sprinkle with 1/2 cup grated Parmesan, toss to combine, and roast until cauliflower is tender, 10-12 minutes longer.
