Roasted Sausage and Vegetables – A family favorite that is great for a weeknight meal of company dinner. Always a big hit!
Roasted Sausage and Vegetables is a great hearty meal. You can change the vegetables by adding , mushrooms, carrots, zucchini ect.
I usually use whatever I have on hand. I normally mix sweet and hot sausage but you can use whatever you want. We just happen to like the hot/ sweet mix.
Roasted Sausage and Vegetables is also great for a weeknight meal or when your having a casual company dinner.
You can easily prepare it, toss it in the oven and spend time with your friends while it cooks. I usually like to serve this with a garden salad or Caesar salad.

- 1 lb potato peeled and cut into 1 inch chunks
- 1 green bell pepper cut into 1 inch pieces
- 1 red bell pepper cut into 1 inch pieces
- 1 medium onion cut into 1 inch chunks
- 1/4 cup olive oil
- salt and pepper to taste
- 1 1/2 lb Italian sausage cut into halves ( hot, sweet or a combo of both )
Preheat oven to 425.
Spread the potatoes in a single layer in a shallow roasting pan, do not crowd them or they will not brown.
Drizzle with the oil and sprinkle with salt and pepper to taste.
Roast the potatoes, stirring once or twice, for 35 -40 minutes.
Place sausage and veggies on top of poatoes
Bake for 25- 30 minutes, or until the sausages and vegetables are cooked through.
