I have made this sauce to pour over broccoli and baked potatoes! That’s how yummy it is. You can just eat it with a spoon or a tortilla chip. It is that good.
We had Stuffed Jalapeno Popper Chicken once and we fell in love with it. My friend gave me this recipe years ago. I made a few changes to it to suit our tastes but honestly sometimes I still change some things around. The last time I made it, I didn’t have Montery Jack cheese so I used cheddar cheese.
- 3 chicken breasts
- 1/2 tsp cumin
- 1/2 tsp chili powder
- sea salt and pepper to taste
- 2 cloves garlic minced
- 3 jalapenos seeded and chopped
- 4 oz full fat cream cheese
- 1/3 cup light cream
- 3/4 cup chicken broth
- 3 slices of bacon chopped
- 1 tbsp. chopped fresh cilantro
- 3/4 cup shredded monterey jack cheese
Pan fry the bacon until crisp. Remove the bacon from the pan but leave grease.
Sprinkle cumin, chili, salt and pepper on each side of chicken breasts and pan fry in the bacon grease until cooked through, flipping half way.
Remove chicken and keep warm. Place chopped jalapeno and garlic in pan and cook for approximately 2 minutes over medium heat. Add chicken broth, scraping and deglazing the leftover browned bits in the pan.
Add cream cheese and stir in until melted. Add monterey jack cheese and light cream and stir until melted.
Add bacon crumbles and cilantro, stirring through for a minute or so. Spoon sauce over chicken.
