CABBAGE GREEN GODDESS SALAD

Green cabbage, radishes, cucumbers, olives, avocado, hazelnuts, parmesan cheese, and rich green goddess dressing combine to create a salad that’s as delicious as it is healthy.

Ingredients

– Radishes – Mini cucumbers – Green cabbage – Green olives – Chopped hazelnuts – Avocado – Grated parmesan cheese

Peel and chop garlic and shallot, then add to a food processor with parsley, lemon zest and juice, olive oil, Parmesan, hazelnuts, and salt.

Pulse until creamy, adding more oil if needed. Slice cabbage into thin pieces, and add to a large bowl with thinly sliced radishes and cucumbers.

Optionally, halve the green olives and add them along with chopped hazelnuts. Pour in the dressing and mix thoroughly.

Add sliced avocado just before serving, and top with extra chopped hazelnuts and grated Parmesan.
