These delicious Cinnamon Roll Cookies feature a simple sugar cookie dough infused with cinnamon and nutmeg, and are topped with a vanilla glaze for that classic cinnamon roll flavor.

– All-purpose flour – Baking powder – Salt – Brown sugar – Cinnamon – Nutmeg

Beat sugar and butter until light and fluffy in a medium bowl, then mix in egg and vanilla.

In a separate bowl, whisk together flour, baking powder, and salt. Gradually combine with the butter mixture.

Divide the dough into thirds, wrap ⅔ in plastic wrap, and mix the remaining third with brown sugar, cinnamon, and nutmeg before wrapping it as well.

Chill both doughs for an hour. Roll each dough separately between parchment paper to equal thickness and size, then chill again.

Layer the spiced dough on the plain dough, roll into a log, and chill for 2 hours.

Preheat the oven to 350°F, slice the chilled dough into ¼” thick slices, and bake until edges are lightly golden.
