This Egg Roll Soup is a quick and easy meal that everyone will love! This satisfying soup recipe features cabbage, ground pork, and carrots, in a flavorful broth seasoned with ginger.

– ground pork – olive oil – white onion – carrots – green cabbage – garlic cloves – chicken broth or stock – ground ginger

Heat a large pot over medium heat, crumble in ground pork and cook until lightly browned, then set aside; in the same pot, heat oil and sauté onions and carrots until soft, about 3-4 minutes.

Add cabbage and garlic and cook for 2-3 minutes; return cooked pork to pot, add chicken broth and ginger, bring to a simmer, cover, and reduce heat to low, simmer until vegetables are tender, about 15 minutes.
