HOT COCOA COOKIES WITH MINI MARSHMALLOWS

To make these cookies, beat butter, granulated sugar, and brown sugar until fluffy. Add eggs and vanilla extract, mix well. In a separate bowl, whisk flour, hot cocoa mix, baking powder, and salt. Combine dry mixture with wet, using an electric mixer (the dough will be thick).

Refrigerate covered dough for at least 30 minutes. Preheat oven to 350F, line baking sheets with parchment paper. Scoop 1½ inch dough balls onto sheets, leaving space. Bake at 350F for 9-11 minutes. Cool on sheets for 3-5 minutes, then transfer to a wire rack to cool completely.
