These Lemon Cheesecake Bars are decadent, delicious, and best of all, easy.

– Vanilla wafers – Marshmallow fluff – Lemon zest – Lemon juice – Mint leaves

Mix vanilla wafer crumbs with melted butter, then press into a prepared baking dish, and bake crust.

In a bowl, beat cream cheese and sugar until creamy, then add vanilla, eggs, marshmallow fluff, lemon zest, and juice, mixing well. Pour filling over crust and bake.

For the glaze, cook sugar, egg, lemon juice, zest, and mint leaves in a saucepan until thickened; cool in refrigerator.
