These Sour Cream and Chive Scalloped Potatoes are the perfect side dish for any meal. They are creamy, flavorful, and always a crowd-pleaser.

In a large saucepan, melt butter and sauté finely chopped garlic over low/medium heat.

Add flour and salt, and whisk, then gradually add vegetable broth while whisking to prevent lumps. Bring the mixture to a low boil, stir in sour cream, and remove from heat. Add chopped chives and set aside.

Peel and thinly slice the potatoes, then layer them in a greased 9x13 baking pan.
