Strawberry Shortcake Sandwich Cookies feature strawberry buttercream frosting sandwiched between two soft, chewy cookies loaded with finely-diced strawberries.

Combine flour, baking powder, and baking soda in a medium bowl; in a separate large bowl, beat butter, sugar, and brown sugar until fluffy, then add vanilla extract and eggs one at a time, mixing between each addition.
