Ingredients

  • 1 large head cauliflower
  • 1 sliced or chopped medium onion
  • 1 teaspoon dried thyme or use fresh
  • 4 minced garlic cloves
  • 4 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Sea salt
  • Freshly ground black pepper
  • ½ cup grated Parmesan

Instructions

  • Preheat oven to 425°F.
  • Cut 1 medium head cauliflower into florets and toss on a large rimmed baking sheet with sliced or chopped medium onion.
  • In a bowl mix thyme , minced garlic cloves, and tablespoons olive oil , balsamic vinegar, sea salt , and freshly ground black pepper.
  • Pour over cauliflower and onion and toss to evenly cover
  • Roast, tossing occasionally, until almost tender, about 35 – 40 minutes.
  • Sprinkle with 1/2 cup grated Parmesan, toss to combine, and roast until cauliflower is tender, 10-12 minutes longer.
