Ingredients
1lbpotatopeeled and cut into 1 inch chunks
1green bell peppercut into 1 inch pieces
1red bell peppercut into 1 inch pieces
1medium onioncut into 1 inch chunks
¼cupolive oil
salt and pepperto taste
1 ½ lb Italian sausage cut into halves ( hot, sweet or a combo of both )
Instructions
Preheat oven to 425.Spread the potatoes in a single layer in a shallow roasting pan, do not crowd them or they will not brown.Drizzle with the oil and sprinkle with salt and pepper to taste.Stir well.Roast the potatoes, stirring once or twice, for 35 -40 minutes.Place sausage and veggies on top of poatoesBake for 25- 30 minutes, or until the sausages and vegetables are cooked through.Serve hot.
