Garlic Baked Haddock

Growing up in New England, you are surrounded by all kinds of delicious fish and seafood. This Garlic Baked Haddock with buttery Ritz crackers is a staple in our house.

Ingredients

  • 1 ½ lb haddock fillets
  • 4 tbsp. salted butter melted
  • 3 garlic cloves finely minced
  • 4 tbsp. white cooking wine
  • 2 tbsp. fresh squeezed lemon juice
  • 15 Ritz crackers crumbled
  • Fresh Parsley minced

Instructions

  • Preheat oven to 350.  Rinse fish fillets and pat dry with a paper towel. Fit in the baking dish or ceramic dish .
  • Combine melted butter, garlic, cooking wine and lemon juice. Pour a few tablespoons into the bottom of your baking dish.
  • Place fish fillets on top of the butter mixture in the baking dish.
  • Pour remaining butter mixture over the top. Evenly sprinkle the Ritz crackers over the top of the fish. Then lightly sprinkle with the parsley.
  • Bake, uncovered, for about 15 minutes or until the fish flakes easily.
  • I broil for 5 minutes more to crisp up the Ritz cracker crumbs. Check your oven to see what works best for you.
