Slow Cooker Low Carb Pulled Pork -   We are huge fans of pulled pork. Trying to keep low carb isn't always easy but this recipe will make you forget all about that.

Ingredients

  • 3 lb boneless pork shoulder
  • 1 tbsp garlic powder
  • 1 tsp Kosher salt
  • ½ tsp pepper
  • ½ tsp paprika
  • ½ tsp celery salt
  • tsp ground cloves
  • ½ tsp mustard powder
  • 3 cups water
  • 1 medium onion chopped into small cubes
  • 3 large galic cloves coarsley chopped
  • BBQ SAUCE
  • ½ tsp ground alspice
  • ¼ cup prepared yellow mustard
  • ¼ cup melted butter
  • 2 tbsp hot sauce
  • 4 tbsp apple cider vinegar
  • 3 tbsp low sugar ketchup I use Heinz
  • 4 tbsp sugar substitute I use Stevia
  • ½ tsp xanthan gum you can omit this but it may not be thick enough

Instructions

  • For the pulled pork:
    In a  bowl, combine the  garlic powder, salt, pepper, paprika,  celery salt, cloves, and mustard powder.
    Mix well. Rub the spice mixture all over your pork. Add the water to a large crock pot.
    Add chopped onion and garlic cloves to water
    Place the pork in the pot and cover. Cook on high for four hours, or until tender and falling apart.
    Remove the meat from the slow cooker, leaving the juices behind.
    Shred the pork  with your fingers or by using two forks
    For the BBQ sauce:
    Add all of the sauce ingredients to the remaining liquid in the crockpot, whisking until smooth.
    Cover and cook on high for about 20 minutes
    . Add the meat back to the sauce and stir until fully coated. Serve hot.
    Freeze any remaining pork with juices
