Slow Cooker Mississippi Chicken with Carrots and Potatoes - As everyone one knows the star of what makes a Mississippi recipe is butter, ranch dressing, Au jus gravy and pepperoncini peppers.  This recipe is just a little bit different but just as delicious!

Ingredients

  • 1 ½ lb boneless chicken breasts
  • 4 yukon gold potatoes cubed or sliced
  • 3-4 carrots sliced
  • ½ cup butter 1 stick
  • 1 pkg hidden valley ranch dressing dry seasoning
  • 1 pkg au jus
  • ½ cup chicken broth
  • 4-8 pepperoncini peppers add as many as you like

Instructions

  • Grease your slow cooker if you wish
    Place cubed potatoes and carrots on the bottom and pour in the chicken broth on top
    Place chicken breasts on top of the potatoes and carrots
    Sprinkle the ranch seasoning over the chicken, then the package of au jus
    Place the stick of  butter on the very top of everything. Place the pepperoncini peppers around butter 
    Cover and let cook on low for 7 hours or until the potatoes and carrots are soft and cooked through
    Remove the chicken breasts and shred them with two forks, and then return them to the slow cooker. 
    Mix everything well and serve. 
    Serve as is or serve chicken on rolls with veggies on the sides.
