6largered potatoes, washed and diced
2lbsfrozen corn
½largeyellow onion, diced
3cuosvegetable broth
1cupsharpcheddar cheese, shredded
3cupshalf and half
2tbsp cornstarch
3 tbspunsalted butter
Instructions
1.Dice the red potatoes and onions and set aside2.Place the IP on saute mode3.Add butter and onion and saute until the onions become translucent4.Add the broth, potatoes, and corn5.Place the lid onto the IP and seal the steam valve6.Set to manual high pressure for 10 minutes7.Once the timer goes off, release the steam8.Once the steam has gone, using a small bowl, mix in the cornstarch and 3 tbsp water until blended9.Stir into the chowder10.Place the IP on saute and bring to a boil11.Mix in the half and half and cheddar cheese12.Turn IP off and allow chowder to sit for 5 minutes before enjoying!
