Instant Pot Beef Bourguignon - Tender, melt in mouth  pieces of  beef , vegetables cooked to perfection in a scrumptious wine broth.

Ingredients

  • 5 carrots; peeled and quartered
  • 1 box white pearl onions; peeled
  • 2 lbs beef stew meat
  • 2 potatoes; diced
  • 2 bay leaves
  • 2 tbsp minced garlic
  • 2 tbsp bacon grease or olive (I use bacon grease)
  • 2 cups Chianti or Burgundy wine
  • 1 cup beef stock
  • 1 tbsp cornstarch , if needed
  • ΒΌ cup beef stock

Instructions

  • 1.Place bacon grease or oil into the instant pot. Turn on saute mode.
    2.Add beef and onions then saute until browned. Turn off saute mode.
    3.Add in carrots and potatoes. Top with wine, garlic, broth, and bay leaves.
    4.Set to high pressure and cook for 35 minutes. Release pressure when the instant pot is done counting.
    5.Optional: remove all vegetables and meat to a bowl. Turn instant pot to saute mode. Whisk cornstarch with 1/4 cup beef broth. Add in cornstarch to the broth/wine to make a gravy. Bring to a boil and stir often until thickened. Turn off saute mode.
    6.Add vegetables and meat to broth. Serve!
