Pumpkin Spice Sugar Cookies

If you're craving that amazing taste of fall, these Pumpkin Spice Sugar Cookies are calling your name. Not only are they "melt in your mouth" good, but they're super simple to whip up in a jiffy as well.

Ingredients

  • ½ cup butter
  • ½ cup pumpkin puree
  • 2 cups sugar
  • 2 large eggs
  • 2 tbsp. milk
  • 1 tbsp. vanilla extract
  • 3 cups flour
  • 1 tbsp. pumpkin pie spice
  • 1 tsp. baking powder
  • ½ tsp. salt
  • 1 cup of sugar mixed with 1 teaspoon of cinnamon - Optional


Instructions

  • In the mixing bowl of a stand mixer, (or a large bowl if using a hand mixer) place the butter, pumpkin, sugar, eggs, vanilla, and milk, and blend until smooth and creamy. 

  • In a separate bowl, mix the flour, pumpkin pie spice, baking powder, and salt, until well blended.
  • Add the flour mixture to the mixing bowl, and mix on low until the ingredients are blended.  Scrape down the sides of the bowl, and mix again.

  • Line 2 cookie sheets with parchment paper, and drop the cookies by the tablespoonful onto the parchment paper about 2 inches apart.
     Sprinkle the tops with cinnamon sugar mixture if desired.


  • Bake the cookies at 375 for 10 -12 minutes, or until cookies are golden brown.  Remove cookies from oven to a wire rack to cool.  Serve and Enjoy!
