- 2 cups shredded hash browns
- 1 cup shredded Mexican cheese, divided in half
- ⅓ cup diced red or yellow peppers
- ⅓ cup diced green peppers
- ¼ cup salsa
- ¼ cup chopped green chilies
- ½ cup heavy cream
- 1-2 teaspoons cumin
First cook your peppers over medium-high heat with a little oil, until they start to soften up.
Add your hash browns, salsa, and green chilies. Stir, and cook for 5 minutes.
Add in 1/2 cup of cheese and heavy cream, cook covered for 6-7 minutes, stirring frequently. Uncover, top with remaining cheese and cumin, cover, and cook a final 5 minutes.
Serve topped with cilantro, jalapeños, lime juice, and anything else you prefer.
