Cabbage Roll Soup

This is the best Cabbage Roll Soup recipe. All the flavor of your favorite cabbage rolls without the work and the hassle that goes into making them.

Ingredients

  • 2 teaspoons Olive oil 
  • 1 lb. Ground beef 
  • 1 Medium onion, diced
  • 3 garlic cloves, chopped 
  • 2 carrots, chopped or sliced 
  • 3 cups Chopped cabbage
  • 4 cups Low-sodium beef broth
  • 3  8 oz. cans of tomato sauce
  • 1/2 cup White rice, uncooked
  • 1 bay leaf
  • 1 tablespoon Light Brown Sugar 
  • 2 tablespoons Chopped Parsley 
  • Salt and pepper to taste

Instructions

  • In a medium saucepan add in olive oil ,chopped onion and garlic. cook over medium heat.
  • Add in ground beef with the oil, onions, and garlic. Cook until just brown. Then add cut carrots and cabbage.
  • Add the uncooked rice. Add in your beef broth, tomato sauce, brown sugar, herbs, and spices, string it lightly. Leave your bay leaf whole so that it can be removed easily before serving.
  • Cover and allow it to cook for 25 to 30 minutes over medium-low heat until your rice is tender. Stir occasionally to prevent it from sticking to the bottom of the pot. Add salt and pepper to taste.
  • Carefully remove the bay leaf from the pot and serve your cabbage rolls soup hot with a bit of fresh chopped parsley for garnish.
