These Slow Cooker Mexican Sloppy Joes are so addicting, you will want to make them every week! Ground beef, onion, taco seasoning, tomatoes with green chiles and cheese come together to create the perfect cheesy sloppy joe.

Ingredients

  • 1 ½ pounds lean ground beef browned and drained
  • Small onion diced
  • 2 tablespoons ketchup
  • 1 ounce taco seasoning
  • 10 ounces diced tomatoes with green chiles drained
  • 4 ounces Velveeta cheese cubed
  • 4-6 buns

Instructions

  • Into your slow cooker add your cooked and drained ground beef, diced onion, ketchup, taco seasoning and tomatoes with green chiles.
  • Stir to combine.
  • Cook on low 4-6 hours.
  • Right before you are ready to serve add in the cubed Velveeta cheese and stir until melted.
  • Add salt and pepper to taste.
  • Place on your buns.
  • Serve!

Notes

  • You can add diced jalapenos to the mix before cooking for a kick.
  • Top with avocado, sliced jalapeno or tortilla chips.
  • You can add diced green or red bell peppers to the mix before cooking if you like.
  • This is also delicious over rice or stuffed into baked potatoes.
