Melting Potatoes Recipe

Melting potatoes are crispy, buttery, and packed full of flavor. Plus, they melt in your mouth. They are the ultimate side dish.

Equipment

  • sharp knife or mandolin slicer
  • large bowl
  • large rimmed baking sheet
  • microplane

Ingredients

  • 4 medium sized potatoes
  • 4 tablespoon butter melted
  • 1 teaspoon salt
  • 1 teaspoon fresh thyme
  • 1 cup vegetable broth or chicken broth
  • 1 tablespoon fresh lemon juice
  • 4 garlic cloves
  • Black pepper to taste

Instructions

  • Preheat the oven to 500 degrees. (That’s not a typo!)
  • Peel and slice the potatoes into thick ½” slices.
  • Melt the butter in a large bowl, and toss the potatoes, thyme, salt and pepper to thoroughly coat the potatoes. Place in a single layer on a baking tray with sides. Bake for about 15 minutes until one side is golden brown.
  • While they bake, squeeze the lemon juice into a measuring cup and grate the garlic using a microplane. Add in the broth and stir.
  • After 15 minutes, turn each potato slice over and pour the garlic/lemon mixture over the top of the potatoes and return them to the oven to bake for another 10-15 minutes, until they are golden brown. Remove and serve. Sprinkle with extra thyme for garnish if desired.
