Ingredients
4 ½cupsfresh blueberries
½cupsugar
5teaspoonscornstarch
2tablespoonsfresh squeezed lemon juice
Zest of one lemon
3cupsflour
¼cupbrown sugar
¾cupsugar
1teaspoonbaking powder
½teaspooncinnamon
½teaspoonsalt
1cupbutter
1 ½teaspoonvanilla
1egg
Instructions
Preheat the oven to 375 degrees.
In a small bowl, whisk together the ½ c sugar and the cornstarch.
Set aside for a moment.
Zest the lemon, and squeeze its juice over the bowl of blueberries.
Sprinkle the sugar and cornstarch mix over them and stir them well. Set them to the side.
In a large bowl, mix the flour, sugars, baking powder, cinnamon, and salt. Add the butter into the flour using a pastry cutter to create fine crumbs.
In a small bowl, whisk the egg and the vanilla together and add it to the flour, continuing to cut it into the flour mixing using a pastry cutter.
Spray a 9” x 13” baking pan using cooking spray and spoon about half of the crumb mixture into the base of the dish and using your hands, press down firmly to create a base layer.
Stir the blueberries well before spreading them on top of the bottom layer.
Sprinkle the remaining crumb mixture over the top of the berries. Place in the oven and bake for 45 minutes. The top should turn lightly golden brown.
Remove and allow to cool slightly before slicing and serving!
