  • 1 1/2 lb haddock fillets
  • 4 tbsp. salted butter melted
  • 3 garlic cloves finely minced
  • 4 tbsp. white cooking wine
  • 2 tbsp. fresh squeezed lemon juice
  • 15 Ritz crackers crumbled
  • Fresh Parsley minced

  1. Preheat oven to 350.  Rinse fish fillets and pat dry with a paper towel. Fit in the baking dish or ceramic dish .

  2. Combine melted butter, garlic, cooking wine and lemon juice. Pour a few tablespoons into the bottom of your baking dish.
  3. Place fish fillets on top of the butter mixture in the baking dish.
  4. Pour remaining butter mixture over the top. Evenly sprinkle the Ritz crackers over the top of the fish. Then lightly sprinkle with the parsley.
  5. Bake, uncovered, for about 15 minutes or until the fish flakes easily.
  6. I broil for 5 minutes more to crisp up the Ritz cracker crumbs. Check your oven to see what works best for you.
