Easy Creamy Pasta Salad - Easy and delicious creamy pasta salad recipe perfect for weeknight meals, BBQ's and weekend potlucks!  This is a family favorite and has become our go to pasta salad recipe.

  • 1 lb rotini pasta or pasta of your choice
  • 1 orange pepper,cleaned and chopped
  • 1 red pepper, cleaned and chopped
  • 1/2 small red onion, chopped
  • 1/2 english cucumber, quartered and sliced
  • 12 black olives, sliced

For The Dressing

  • 1/2 cup extra virgin olive oil
  • 1/2 cup red wine vinegar
  • 1 tbsp sugar
  • 1 tbsp oregano
  • 1 tsp garlic powder
  • 2 tbsp mayonnaise
  • salt and pepper to taste


  1. Mix together dressing first and set aside  making sure sugar is dissolved completely.

    Cook pasta according to box directions. I like mine al dente.

    While pasta is cooking cut the vegetables for the pasta salad and place them in a med- large bowl. Large enough to mix the pasta salad.

    When pasta is cooked drain pasta well and rinse under cold water. 

    Add pasta the vegetables . Mix together. Then pour dressing over pasta a little at a time. 

    You may find you like your pasta salad with a little less dressing. You can always add more.  Toss pasta salad as your pouring the dressing. 

    We normally chill the pasta salad for a few hours and sometimes overnight. 

    This recipe can easily be doubled or add more vegetables!
