Ingredients

  • 6 large red potatoes, washed and diced
  • 2 lbs frozen corn
  • ½ large yellow onion, diced
  • 3 cuos vegetable broth
  • 1 cup sharpcheddar cheese, shredded
  • 3 cups half and half
  • 2 tbsp cornstarch
  • 3 tbsp unsalted butter

Instructions

  • 1.Dice the red potatoes and onions and set aside
    2.Place the IP on saute mode
    3.Add butter and onion and saute until the onions become translucent
    4.Add the broth, potatoes, and corn
    5.Place the lid onto the IP and seal the steam valve
    6.Set to manual high pressure for 10 minutes
    7.Once the timer goes off, release the steam
    8.Once the steam has gone, using a small bowl, mix in the cornstarch and 3 tbsp water until blended
    9.Stir into the chowder
    10.Place the IP on saute and bring to a boil
    11.Mix in the half and half and cheddar cheese
    12.Turn IP off and allow chowder to sit for 5 minutes before enjoying!
