Ingredients

  • 1 lb ground beef
  • 1 tsp olive oil
  • 1 tsp galic, minced
  • 1 ½ tbsp taco seasoning
  • 1 bag steamed corn
  • 1 cup brown rice
  • 1 can black beans, drained
  • salsa, avocado

Instructions

  • 1.Place 1 cup brown rice and 2 cups of water and prepare on the stove top.
2.Prepare the toppings by warming the black beans in a small saucepan over medium heat, along with steaming the corn. (I like to get the bags that you can just heat in the microwave, they are good and take only about 4 minutes)
3.Start the ground beef by placing some olive oil in a large skillet on medium to high heat. Add in the beef and taco seasoning and garlic and mix until combined and cook until brown.
4.Assemble your bowl by adding 1 cup beef and 1 cup rice into the bowl, and top with corn, beans,, salsa, avocado and your favorite toppings such as shredded cheese, chopped tomato, shredded lettuce, sour cream ect!
