Tropical Macaroni Salad

Tropical Macaroni Salad is a fun twist on your average pasta salad. Dig into this scrumptious taste of the tropics that is always a hit at BBQ's, potlucks and family gatherings!

Ingredients

  • 1 16 oz. box elbow macaroni (cooked according to package directions)
  • 1 cup red onion, finely chopped
  • 1 cup celery, finely chopped
  • 1 cup carrots, finely chopped
  • 1 cup red pepper finely chopped
  • 2 green onions, finely chopped
  • 2 hard boiled eggs, finely chopped
  • 1 20 oz. can pineapple chunks
  • 1/4 cup sour cream
  • 1/4 cup mayonnaise
  • 1/2 cup Hawaiian marinade (we use Lawry's or World Harbor)

Instructions

  1. 1. In a small bowl combine your sour cream, mayo, and Hawaiian marinade, mix until well blended.

    2. In a large bowl combine chopped veggies, pineapple, and macaroni, top with dressing and stir until well combine and all macaroni is coated with dressing.

    3. Cover and refrigerate until ready to serve.
