Chocolate Orange Shortbread Cookies

The trio of flavors in these Chocolate Orange Shortbread Cookies are going to change everything that you thought you knew about cookies. They're crispy bites of heaven if you're asking us. Perfect for fall or holiday cookies and so simple to bake!

Ingredients

For The Cookies

  • 1 cup butter, softened

  • ½ cup sugar

  • 3/4 cup mini chocolate chips
  • 2 cups flour
  • 1 tsp. vanilla extract
  • 1 tbsp. orange zest

For The Chocolate and topping

  • 4 squares of chocolate bark - to melt

  • 1 tbsp. heavy cream
  • orange zest to sprinkle on chocolate


Instructions

  • In the mixing bowl of a stand mixer, cream the butter and sugar, until it's light and fluffy.

  • Add the vanilla, and orange zest, and mix well.  Add the flour a little at a time until all has been added.

  • Scrape down the sides of the mixing bowl, and blend again. Add mini chocolate chips and fold in.
  • Place the cookie dough on a large piece of parchment paper, and form a log.  Roll the parchment paper around the log of cookie dough, and chill for an hour in the refrigerator.

  •  Remove the log of cookie dough from the refrigerator, and slice the cookies in 1/8 inch slices, and place on a parchment lined cookie sheet.

  • Bake at 350 degrees for 20 -25 minutes, or until cookies are golden brown.  When cookies are done, remove from oven to a wire rack to cool.

  • Melt the chocolate in a microwave safe dish, at 10 second intervals, until the chocolate starts to soften.  Stop the microwave and stir the chocolate.  Stir in the heavy cream, until it's well blended.  You can place the chocolate back in the microwave for 10 seconds,if it is not completely melted



  •  Stir well, and dip one end of the cookies in the chocolate, and place them on the wire rack for the chocolate to set.  Sprinkle the chocolate with orange zest before it hardens on the cookies.  When the chocolate sets (about an hour) serve and Enjoy!
