Strawberry Lemon Blondies

Strawberry Lemon Blondies are a simple and delicious spring or summer dessert to whip up. These addicting barsare the easiest indulgent treat!

Ingredients

Blondies:

  • 2 sticks (1 cup) unsalted butter, softened
  • ¾ cup granulated sugar
  • 1 egg
  • ¼ cup fresh squeezed lemon juice
  • 2 ¼ cups all purpose flour, divided
  • ½ tsp. baking powder
  • ½ tsp.  salt
  • 1 cup fresh strawberries, hulled, quartered and chopped

Icing:

  • 1 cup confectioners sugar
  • 2 tbsp.  lemon juice

Instructions

  • Preheat oven to 350 degrees F. Line an 8x8 baking dish with parchment paper or grease with non-stick cooking spray. 
  • In a large mixing bowl, cream butter and sugar. Add in egg and beat until incorporated. Add lemon juice and stir. 
  • In a separate bowl, whisk 2 cups of the flour, baking powder, and salt until combined. Add the flour mixture to wet ingredients bowl and stir until completely mixed in. In a small mixing bowl, toss the strawberries with the remaining 1/4 cup of flour. Add to the blondie batter and fold in.
  • Pour into prepared baking dish and spread evenly. 
  • Bake for 30-35 minutes, or until set. Do not over bake! Let cool on rack.
  •  In a small bowl, whisk the powdered sugar and lemon juice until smooth. Drizzle and spread over the completely cooled blondies and let set before cutting.
