Marinated Tomatoes Recipe

  • 2 pounds Cherry tomatoes  red , orange or yellow if you like
  • 1 medium red onion - sliced Chiffonade style
  • 1/2 cup basil - chopped
  • 1/2 cup Balsamic Vinegar
  • 1 tablespoon red wine vinegar
  • 1/4 cup extra virgin olive oil
  • 1/4 cup red wine Vinegar
  • 1 tablespoon minced garlic
  • 1 tablespoon lemon juice
  • 1 1/2 tablespoons brown sugar
  • garlic salt - to taste
  • salt and pepper to taste
  • 1/2 teaspoon ground Oregano


  1. Wash the Cherry tomatoes, and drain them on paper towels.

  2. Cut the tomatoes in half, and place them in a large bowl.

  3. Peel the red onion, and slice chiffonade style, and add to tomatoes.

  4. Wash and chop the fresh Basil. Add the minced garlic, and toss all together.

  5. Blend the Balsamic Vinegar, riced wine vinegar, Olive oil, lemon juice, brown sugar, and Oregano, and pour over tomato relish.

  6. Sprinkle with garlic salt, and salt and pepper, and toss well to mix.

  7. Place the tomato relish in small individual glass containers, and serve at each place setting.

  8. Can also be served in small dishes, or family style. Enjoy!
