Vegetarian Enchilada Skillet

This Vegetarian Enchilada Skillet recipe is a one pan wonder! Fast and easy, hearty and so very delicious.

Ingredients

  • 1 tablespoon Olive oil
  • 1 red bell pepper, chopped
  • 1 small zucchini chopped
  • 2 cloves of minced garlic
  • 1 cup of frozen corn
  • 1 15 ounce can of black beans
  • 1 tablespoon chili powder
  • 1 tsp. cumin
  • 1/2 tsp. paprika
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 lime, juiced
  • 1 20 ounce can of enchilada sauce
  • 1- 2 avocado's, green onions, cilantro for garnish
  • 2 cups Mexican cheese blend

Instructions

  1. Heat cast iron skillet over medium heat and add olive oil.

  2. Add onion, zucchini, red bell pepper, and saute for 4-5 minutes.

  3. Next, add garlic, saute for 1 minute and then add corn, beans, salt, chili powder, cumin, and smoked paprika. 

  4.  Simmer for 5 minutes and then add enchilada sauce, simmer for another 5 minutes. 

  5.  Sprinkle cheese over the top and cover for 5 minutes or until melted, turn off heat and let stand for another 5 minutes.

  6. Garnish with green onions, cilantro, and sliced avocado.
