Easy Frito Taco Pie

A family friendly recipe that will stick to your ribs. Easy Frito Taco Pie is always a big hit!

Ingredients

  • 1 pound ground beef
  • 1 packet of taco seasoning
  • ½ cup water
  • 1 (14oz) can diced tomatoes (or salsa)
  • 1 cup tomato sauce
  • 1 cup corn
  • 1 bag Fritos® corn chips (about 5 cups)
  • 2 cups cheddar cheese, shredded
  • ¼ cup green onions chopped
  • ¼ cup diced fresh tomatoes
  • sour cream for serving (optional)

Instructions

  • Preheat oven to 350 degrees and grease a 9x13 baking dish.
  • In a large skillet, brown the ground beef until crumbled and cooked through. Add the onions and packet of taco seasoning and water. Simmer until liquid thickens. Add in corn, tomato sauce and diced tomatoes and simmer for another 3-4 minutes, stirring occasionally. Remove from heat.
  • In your baking dish, spread a layer of the corn chips in the bottom of the pan. Pour the meat mixture over the top of the chips. Next, spread the 2 cups of shredded cheese over the meat, followed by a final layer of the remaining corn chips.
  • Bake in the oven for 30-35 minutes. Top the casserole with the diced onions and fresh diced tomatoes. Serve warm with a dollop of sour cream!
  • Feel free to add diced avocado, salsa, guacamole ect. on top.
