Strawberry Cheesecake Poke Cake

Strawberry Cheesecake Poke Cake is the best of two worlds, and it's so easy. Pudding, Jello, and boxed cake create something amazing.

  • 1 box white cake mix ( and ingredients on box to make the cake)
  • 1 small package Strawberry Jello
  • 1 cup boiling water
  • ½ cup cold water
  • ½ cup fresh strawberries
  • 1 small box instant cheesecake pudding
  • 2 cups cold milk
  • 8 oz. cool whip
  • strawberries for topping


  1. Preheat oven to 350 F

  2. Make the cake according to directions on box.

  3. Spray the bottom and sides of a 9x13 pan lightly with baking spray.

  4. Pour batter into the cake pan and bake for 30 minutes.

  5. Allow the cake to cool completely.

  6. With a fork poke holes all over the cake.

  7. Make the Strawberry Jello pour over the cake.  Refrigerate for 1 hour.

  8. Make the Cheesecake pudding and mix in ½ cup strawberries and pour over the cake.  Refrigerate for 1 hour.

  9. Spread the cool whip over the top of the cake and refrigerate for 1 hour.  Slice and serve with a fresh strawberry on top and on the side.
