Chicken Quesadilla Ring

This chicken quesadilla ring is loaded with pulled chicken, cheese, and more. It's perfect for Taco Tuesdays or parties.

Ingredients

  • 1 Package of Flour Tortilla's - 6 inch
  • 1 Rotisserie Chicken - Pulled, shredded or chopped
  • 1 Sweet Onion - finely chopped
  • 1 package off Shredded Mexican Cheese
  • 1 jar of Salsa (your favorite)
  • 1/2 stick of Butter - melted
  • 1 teaspoon of Minced Garlic
  • 2 Tablespoons of Taco Seasoning

Instructions

  • Line a baking sheet/cookie sheet with Parchment paper, and set aside.
  • Pull the Rotisserie Chicken, and cut into small pieces. Chop the Onion, and mix with the pulled chicken.
  • Lay the Tortillas out flat, and fill the center with the Chicken filling, about 1 Tablespoon each, and then sprinkle with the Shredded Cheese.
  • Place a large Ramekin, or small ceramic bowl in the center of the Parchment paper on the baking sheet.  Roll the Tortillas into cone shapes, and place the pointed end slightly under the Ramekin/bowl in the center of the baking sheet. 
  • Continue until you have Tortillas all the way around, then continue filling the flat Tortillas, rolling them in cone shapes, and placing them on top of the first layer of Tortilla's, filling in any gaps between the first layer. 
  • Once you have the Tortillas filled, mix the melted Butter, Minced Garlic, and Taco Seasoning, and brush the seasoned butter on the tops of all the Tortillas. 
  • Sprinkle Cheese on the tops of the Tortillas, and remove the Ramekin or small bowl from the center of the baking sheet.
  • Place the Tortillas in a 350 degree oven for approximately 30 minutes, or until Tortillas are golden brown, and cheese is browned and bubbly. 
  • Remove from oven, and carefully pull the parchment paper off the baking sheet, sliding the Tortillas onto a large wire rack to cool slightly.  Serve with Salsa, re-fried beans, and taco sauce. Enjoy!
