Ingredients

For the Crust:

  • 1 cup Butter - softened
  • 2 cups Flour
  • ½ cup Powdered Sugar

For the Filling:

  • 4 Eggs
  • 2 cups Sugar
  • cup Lemon Juice
  • ¼ cup All-Purpose Flour
  • 1 tsp. Baking Powder

Topping:

  • ½ cup Powdered Sugar

Instructions

  • Preheat the oven to 350 degrees.
  • In a large bowl, place the Flour and Powdered Sugar, and mix well.  Add the softened Butter (Not melted - softened), and using a Pastry Cutter, cut the butter into the flour mixture until it's well blended, and pea size particles have formed.
  • Pour the mixture into a 9 X 13 dish, and evenly press the mixture in the dish with the back of a spoon, or your fingers.  Bake for 20 to 25 minutes, or until just golden brown. Remove from the oven.
  • While the crust is cooling a little, make the filling - In a large bowl, add the Eggs, and Sugar, and mix well to blend.  Add the Lemon Juice, and stir until well mixed.
  • In a small bowl, sift together the Flour, and Baking Powder, and add to the Egg mixture, and stir until well blended.
  • Pour over the baked crust, and place the dish back in the oven for 20 to 25 minutes.
  • When the filling is done, remove the dish from the oven, and cool on a wire rack.  When completely cool, sprinkle it with Powdered Sugar.
  • Cut in 2 X 2 inch squares, serve, and Enjoy!
