Cherry Pie Cookies

Ingredients
- 1 cup unsalted butter softened
- 2 cups flour
- ¾ cup powdered sugar
- 1 teaspoon vanilla
- 15 ounces cherry pie filling
- ½ cup white chocolate chips
Instructions
- Preheat the oven to 325 degrees. Line your baking sheet(s) with parchment and set aside.
- In the bowl of a stand mixer, combine the butter, vanilla and powdered sugar. Mix until smooth.
- Add in the flour and mix to combine, scraping the sides often.
- Scoop out about a tablespoon’s worth of the dough and shape into a ball. Gently indent the center to create a well.
- Fill the well in each cookie with a heaping spoonful of the pie filling, spreading to the edges if needed.
- Bake in the preheated oven for 12-15 minutes or until the cookie is set.
- Allow to cool.
- In a small bowl, melt the white chocolate chips in the microwave, heating for 15-30 seconds at a time and stirring until smooth.
- Transfer the melted white chocolate to a piping bag or a small Ziploc bag. Drizzle the white chocolate over the cookies. Allow to set.
