Cherry Pie Cookies

Cherry pie cookies are soft, buttery thumbprint cookies filled with cherry pie filling and drizzled with white chocolate.

Ingredients

  • 1 cup unsalted butter softened
  • 2 cups flour
  • ¾ cup powdered sugar
  • 1 teaspoon vanilla
  • 15 ounces cherry pie filling
  • ½ cup white chocolate chips

Instructions

  • Preheat the oven to 325 degrees. Line your baking sheet(s) with parchment and set aside.
  • In the bowl of a stand mixer, combine the butter, vanilla and powdered sugar. Mix until smooth.
  • Add in the flour and mix to combine, scraping the sides often.
  • Scoop out about a tablespoon’s worth of the dough and shape into a ball. Gently indent the center to create a well.
  • Fill the well in each cookie with a heaping spoonful of the pie filling, spreading to the edges if needed.
  • Bake in the preheated oven for 12-15 minutes or until the cookie is set.
  • Allow to cool.
  • In a small bowl, melt the white chocolate chips in the microwave, heating for 15-30 seconds at a time and stirring until smooth.
  • Transfer the melted white chocolate to a piping bag or a small Ziploc bag. Drizzle the white chocolate over the cookies. Allow to set.

Notes

Storage: Cookies can be stored in an airtight container in the fridge for up to 3 days.
