Key Ingredients

  • Saltine Crackers: The crunchy foundation of the bark, adding a salty contrast that balances all the sweetness and gives the candy its signature crisp texture.
  • Butter & Brown Sugar: Create the rich, buttery toffee layer that soaks into the crackers.
  • Semi-Sweet Chocolate Chips: Create the chocolate layer to add richness and balance the sweetness of the toffee and strawberries.
  • White Chocolate Baking Bar: Adds a creamy sweetness and creates the pretty swirled effect that makes the bark look extra special.
  • Fresh Strawberries: The star ingredient that gives this bark a fresh, fruity flavor and a pop of color. Their sweetness pairs perfectly with the chocolate and toffee.

Variations

  • Dark Chocolate Strawberry Bark: Swap the semi-sweet chips for dark chocolate for a richer flavor.
  • White Chocolate Strawberry Bark: Use all-white chocolate for an extra-creamy version.
  • Berry Bark: Use your favorite fresh berries in place of strawberries.
  • Nutty Strawberry Bark: Sprinkle chopped pecans, almonds, or pistachios over the top for added crunch.
  • Valentine’s Day Bark: Add festive sprinkles before chilling for a holiday-inspired dessert.
  • Change the Crackers: Try Ritz or Club crackers for a similar, buttery, salty flavor. Try graham crackers for a sweet version.

Expert Tips

  • Fresh strawberries contain a lot of moisture. Pat them dry and let them sit on a paper towel-lined plate while you make the rest of the bark to soak up excess moisture.
  • Quality chocolate melts more smoothly and creates a richer flavor.
  • Three minutes of boiling is the sweet spot for creating a crunchy toffee layer without burning the sugar.
  • Once the chocolate is melted, add the strawberries right away so they adhere properly.
  • You can press the strawberries into the chocolate if necessary to keep them in place.

Chocolate Covered Strawberry Bark FAQs

Do you have questions about this recipe? Here are the answers to the most commonly asked questions.

Can I use frozen strawberries for chocolate covered strawberry bark?

Fresh strawberries are highly recommended for this recipe. Frozen strawberries release excess moisture as they thaw, which can make the bark soft and prevent it from setting properly.

How do I keep strawberry bark from getting soggy?

The key is drying the strawberries thoroughly before adding them to the chocolate. Pat the diced strawberries with paper towels and allow them to air dry for a few minutes to remove excess moisture.

How long does chocolate covered strawberry bark last?

Because it contains fresh strawberries, this bark should be stored in an airtight container in the refrigerator and enjoyed within 2 to 3 days for the best flavor and texture.

Can I freeze chocolate covered strawberry bark?

While you can freeze it, freezing may affect the strawberries’ texture once thawed. For the best results, enjoy the bark fresh or refrigerated.

What is the best chocolate for strawberry bark?

Semi-sweet chocolate provides the perfect balance of sweetness and rich chocolate flavor. You can also use dark, milk, or white chocolate, depending on your preference.

  • Break the bark into pieces and serve.
